  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • to taste Salt and pepper
  • Optional toppings: chopped cilantro, sliced jalapeños, shredded cheese, sour cream

  • Heat the olive oil in a large pot over medium heat. Add the diced onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until the vegetables are soft.
  • Stir in the minced garlic and cook for another minute, allowing the garlic to become fragrant.
  • Add the chicken breasts, chicken broth, Cajun seasoning, oregano, cumin, salt, and pepper. Bring the mixture to a boil.
  • Reduce the heat to low and let it simmer for about 20 minutes, or until the chicken is cooked through.
  • Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back to the pot.
  • Add the white beans and corn to the chili. Stir well and cook for an additional 5-10 minutes, letting the flavors meld together. Adjust seasoning if necessary.
  • Serve hot, garnished with your choice of toppings.

Notes

For added creaminess, stir in cream or a splash of milk right before serving. You can also use rotisserie chicken for convenience. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
