Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until fragrant and softened, about 3-4 minutes.
  • Add ground turkey to the skillet, breaking it up with a spoon. Cook until browned and fully cooked through, about 6-8 minutes.
  • Stir in chopped cauliflower and cook for an additional 3-5 minutes until the cauliflower begins to soften.
  • Pour in the chicken broth, and bring the mixture to a simmer. Add oregano, paprika, salt, and pepper. Stir well to combine.
  • Once the cauliflower has softened, remove the skillet from the heat and let it cool slightly.
  • In a separate bowl, mix the Greek yogurt with half of the shredded cheese. Add this mixture to the ground turkey and cauliflower, stirring until everything is well-coated.
  • Transfer the mixture into a greased 9×13-inch baking dish. Top with the remaining cheese.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until the top is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
