  • 1 cup cooked and mashed sweet potatoes Baked or steamed
  • 1/2 cup chickpeas, rinsed and drained For added protein and texture

  • 2 teaspoons chia seeds Provides omega-3 fatty acids and fiber

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a food processor or blender, add the rolled oats, cooked and mashed sweet potatoes, chickpeas, and cinnamon. Pulse until smooth. Add water or plant-based milk for a softer consistency, if desired.
  • Stir in the chia seeds until well combined.
  • Using a mini ice cream scooper or spoon, place dollops of the batter onto a lined or greased baking sheet, aiming for about 8-9 cookies. Wet your fingertips to flatten each cookie.

Baking

  • Bake in the preheated oven for about 10 minutes, watching closely as baking time may vary.
  • Allow the cookies to cool completely on a wire rack for optimal texture.
