Ingredients
  

For the Cheesecake Filling

  • 1 cup Greek yogurt Use plain, unsweetened for best results.
  • 1 cup cottage cheese Use low-fat if desired.
  • 1/2 cup protein powder Vanilla flavor or your favorite variety.
  • 1/4 cup honey or maple syrup Sweetener of your choice.
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice Freshly squeezed preferred.

For the Crust

  • 1/4 cup almond flour or crushed graham crackers Choose according to preference.

For Serving

  • to taste Fresh berries Use berries of your choice.
  • to taste Mint leaves Optional for garnish.

Instructions
 

Preparation

  • In a large mixing bowl, combine the Greek yogurt and cottage cheese. Whisk them together until smooth.
  • Add the protein powder, honey (or maple syrup), vanilla extract, and lemon juice to the bowl. Mix until well combined and creamy.
  • Prepare your jars by adding a layer of almond flour or crushed graham crackers at the bottom of each jar for the crust.
  • Spoon the cheesecake mixture on top of the crust layer, filling each jar about halfway.
  • Add another layer of the crust followed by more cheesecake mixture until the jars are nearly full, leaving a little space at the top.
  • Refrigerate the jars for at least two hours to let the flavors meld and the texture firm up.

Serving

  • Before serving, top each jar with fresh berries and garnish with mint leaves if desired.
