Ingredients
  

For the apple filling

  • 4 large large apples, peeled and sliced Granny Smith, Honeycrisp, or Fuji work well
  • 2 tablespoons lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

For the topping

  • 1 cup rolled oats Ensure freshness for best taste
  • 1/2 cup almond flour Can substitute with oat flour for nut-free version
  • 1/2 cup protein powder (vanilla flavor recommended) Use plant-based protein powder for vegan option
  • 1/3 cup maple syrup or honey
  • 1/4 cup melted coconut oil
  • 1/2 cup chopped nuts (walnuts or pecans) Add shredded coconut for tropical flair if desired
  • Pinch salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the sliced apples with lemon juice, cinnamon, and nutmeg. Mix well to coat the apples evenly.
  • Spread the apple mixture into a greased baking dish.
  • In another bowl, mix the rolled oats, almond flour, protein powder, maple syrup, melted coconut oil, chopped nuts, and salt. Stir until all ingredients come together to form a crumbly mixture.
  • Sprinkle the oat mixture evenly over the apples in the baking dish.

Baking

  • Bake for about 30-35 minutes, or until the apples are tender and the topping is golden brown.
  • Remove from the oven and allow it to cool slightly before serving.

Notes

Serve warm or at room temperature. For added flavor, serve with Greek yogurt or whipped coconut cream and sprinkle some cinnamon on top.
