Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup Greek yogurt Room temperature for best results.
  • 1/2 cup honey or maple syrup Adjust sweetness to taste.
  • 2 large eggs
  • 1/4 cup melted coconut oil or unsalted butter
  • 2 pieces lemons (zest)
  • 1/4 cup fresh lemon juice Use fresh for superior flavor.
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  • In a separate bowl, blend the Greek yogurt, honey or maple syrup, eggs, melted coconut oil or butter, lemon zest, lemon juice, and vanilla extract until smooth and creamy.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined, being careful not to overmix.
  • Pour the batter into your prepared loaf pan, smoothing the top.

Baking

  • Bake in your preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then carefully transfer it to a wire rack to cool completely.
