Ingredients
  

Main Ingredients

  • 3 pieces ripe bananas, mashed
  • 1 cup Greek yogurt
  • 2 large eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Optional Add-ins

  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup chocolate chips optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or lightly grease it.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the Greek yogurt, eggs, honey or maple syrup, and vanilla extract to the mashed bananas and whisk until well combined.
  • In another bowl, mix together the whole wheat flour, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • If desired, fold in nuts or chocolate chips into the batter.

Baking

  • Spoon the batter evenly into the prepared muffin pan, filling each cup about two-thirds full.
  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  • Once done, remove the muffins and let them cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Use overripe bananas for maximum sweetness. For variations, try different mix-ins or spices.
