Preparation

  • In a large pot, add a splash of oil and heat over medium heat.
  • Add the chopped onion and minced garlic; sauté until translucent and fragrant.

Cooking

  • Incorporate the diced potatoes and pour in the vegetable broth.
  • Bring the mixture to a boil, then reduce to a gentle simmer and cover.
  • Cook for approximately 15 to 20 minutes until the potatoes are tender.
  • Blend the soup until smooth using an immersion blender or a regular blender.
  • Return the soup to the pot (if using a blender) and stir in the coconut milk.
  • Season with salt and pepper to taste.
  • Heat on low for a few more minutes before serving.

Serving

  • Ladle the hot soup into bowls and add your desired toppings.
  • Pair with crusty whole-grain bread or a light salad for a complete meal.
