Ingredients
  

Dry Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup Choose your preferred sweetener.
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup mixed dried fruits (raisins, cranberries, apricots) Feel free to substitute with fruits of your choice.
  • 1/2 cup chopped nuts (walnuts or pecans) Omit for nut-free version.
  • Zest of 1 lemon or orange Optional, adds flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour your bundt pan to prevent sticking.
  • In a bowl, combine the whole wheat flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt. Whisk these ingredients together until evenly mixed.
  • In another bowl, mix the melted coconut oil, unsweetened applesauce, honey or maple syrup, and vanilla extract. Ensure everything is thoroughly blended.
  • Slowly add the dry mixture to the wet mixture. Stir until just combined; do not overmix.

Combining Ingredients

  • Gently fold in the mixed dried fruits, chopped nuts, and zest until evenly distributed.
  • Transfer the batter into the prepared bundt pan, smoothing the top with a spatula.

Baking

  • Place the bundt pan in the preheated oven and bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
  • Once done, remove the cake from the oven and let it sit in the pan for 10-15 minutes. Carefully invert it onto a wire rack to cool completely.

Serving

  • Slice and serve the cake on a festive platter. Optionally, add a dollop of Greek yogurt or whipped coconut cream.
  • Decorate with fresh fruits, a sprinkle of powdered sugar, or a drizzle of honey if desired.
