Instructions
 

Preparation

  • Mash the ripe bananas in a mixing bowl until smooth, setting aside a few slices for garnish.
  • In another bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract, mixing until creamy.
  • In a separate bowl, whisk together cornstarch, cinnamon, and salt.
  • Gradually add the dry mixture to the yogurt mixture, stirring gently until well combined.
  • Fold in the mashed bananas until all ingredients are well mixed.

Setting

  • Transfer the pudding mixture to individual serving cups or a large bowl.
  • Chill in the refrigerator for at least an hour to allow it to set.

Serving

  • Serve the pudding with reserved banana slices on top and sprinkle with crushed graham crackers or granola if desired.
