  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon cinnamon Can adjust spices for flavor variations.
  • 1 1/2 cups whole wheat flour For a gluten-free version, substitute with almond flour.
  • 1/2 cup chopped nuts (optional) Use any preferred nuts for added crunch.
  • 1/2 cup dark chocolate chips (optional) For a sweeter taste.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Stir in the melted coconut oil until well combined.
  • Add the honey or maple syrup, eggs, and vanilla extract, and mix until fully incorporated.
  • Sprinkle in the baking soda, salt, and cinnamon, and stir to combine.
  • Gradually fold in the whole wheat flour until just mixed. Avoid overmixing.
  • If using, fold in the chopped nuts and dark chocolate chips.
  • Pour the batter into the prepared loaf pan, spreading it evenly.

Baking

  • Bake for 60 to 65 minutes or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
