Healthy Baked Feta Potatoes

Deliciously baked, these Healthy Baked Feta Potatoes combine the heartiness of potatoes with the creamy richness of feta cheese, making them a perfect side or main dish.

Ingredients
  

Potatoes

  • 4 medium medium-sized potatoes (yukon gold or red) Keep skin on for extra nutrition.

Cheese

  • 200 grams feta cheese Opt for a block rather than crumbled for best results.

Seasoning

  • 3 tablespoons olive oil Divided between potatoes and feta.
  • 3 cloves garlic, minced Enhances flavor.
  • 1 teaspoon dried oregano
  • freshly ground black pepper to taste
  • salt to taste Adjust based on feta's saltiness.

Garnish

  • fresh parsley For garnish (optional).

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the potatoes thoroughly and slice them into wedges or cubes.
  • In a large bowl, combine the potatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well.

Cooking

  • Spread the seasoned potatoes on a baking sheet lined with parchment paper.
  • Create space in the center and place the feta cheese block there. Drizzle with olive oil.
  • Bake for 30-35 minutes, or until the potatoes are golden brown and tender. Stir halfway through for even browning.
  • Remove from oven and gently crush the feta cheese into the potatoes.

Serving

  • Serve immediately, garnished with freshly chopped parsley if desired.

Notes
