  • 2 cups butterscotch chips Can substitute with white chocolate chips for variation.
  • 2 cups chocolate chips Use semi-sweet or dark chocolate for richer flavor.
  • 3 cups chow mein noodles Provides the essential crunch.
  • 1 cup peanuts Optional; can toast for extra flavor.
  • 1 cup mini marshmallows Optional; adds chewiness.

Preparation

  • In a microwave-safe bowl, combine butterscotch chips and chocolate chips. Microwave in 30-second intervals, stirring after each, until melted and smooth.
  • In a large mixing bowl, combine chow mein noodles and optional peanuts, mixing to ensure even coating later.
  • Pour the melted chocolate mixture over the chow mein noodle mix. Gently fold the two together until all noodles are coated.
  • If using, fold in mini marshmallows until evenly distributed.
  • Line a baking sheet with parchment paper and drop spoonfuls of the mixture onto the sheet, leaving space between each cluster.
  • Allow cookies to cool at room temperature or refrigerate to speed up the setting process.

Notes

Store cookies in an airtight container with parchment paper layers to prevent sticking. They stay fresh for about a week. For variations, consider adding crushed pretzels or dried fruits.
