  • Begin by preparing your vegetables. Shred the green and red cabbage, and finely grate the carrots.
  • In a large mixing bowl, combine the shredded green cabbage, red cabbage, and carrots.
  • Add the diced pineapple, red bell pepper, green bell pepper, sliced green onions, and shredded coconut to the bowl, mixing gently to combine.

Dressing

  • In a separate bowl, whisk together the apple cider vinegar and honey or agave syrup until well blended. Adjust the sweetness if needed.
  • Pour the dressing over the coleslaw mixture, gently tossing to coat all the ingredients evenly.

Final Touch

  • Season with salt and pepper to taste. Adjust flavors based on your preference.
  • Let the coleslaw sit for at least 15 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
