Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pineapple chunks Fresh or canned
  • 1 piece red bell pepper, sliced Can substitute with other bell pepper colors
  • 1 piece yellow bell pepper, sliced Can substitute with other bell pepper colors

Glaze Ingredients

  • 1/4 cup soy sauce Low sodium soy sauce can be used
  • 1/4 cup honey Can substitute with maple syrup for a vegan option
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine soy sauce, honey, olive oil, rice vinegar, minced garlic, and minced ginger. Whisk until well-blended.
  • Arrange the chicken breasts on a large sheet pan and surround with pineapple chunks and sliced bell peppers.
  • Pour the glaze over the chicken and veggies, and season with salt and pepper to your liking.

Cooking

  • Bake in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Notes

For extra flavor, marinate the chicken in the glaze for at least 30 minutes before cooking. Consider adding other vegetables like broccoli or zucchini for more nutrients.
