Ingredients
  

For the Stew

  • 1 pound beef stew meat Choose well-marbled cuts like chuck or round.
  • 3 ribs celery, minced
  • 1 medium yellow onion, diced
  • 2 large carrots, minced
  • 4 cloves garlic, minced
  • 3 ounces tomato paste
  • 1 pound potatoes, roughly chopped
  • 28 ounces can of whole peeled tomatoes, drained and rinsed
  • 2 cups water Add more if needed to cover ingredients.
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large pot, heat over medium-high heat.
  • Add the beef stew meat and sear on all sides until golden brown.
  • Remove the beef from the pot and set aside.

Cooking

  • Add the chopped carrots, minced celery, diced onion, and minced garlic to the pot.
  • Cook and stir until vegetables soften, about 5 to 7 minutes.
  • Sprinkle in salt and pepper to taste.
  • Stir in the tomato paste and cook for about 30 seconds.
  • Return the seared beef to the pot and add the chopped potatoes and rinsed tomatoes.
  • Pour in 2 cups of water to nearly cover the mixture and bring to a rolling boil.
  • Reduce heat and let simmer for about 1 hour, until the beef is tender.
  • Taste and adjust seasonings before serving.

Notes

For best results, let the stew rest for a while after cooking to deepen the flavors. You can also use a slow cooker and adjust cooking times accordingly.
