Ingredients
  

For the soup base

  • 2 tablespoons butter To sauté vegetables
  • 2 onions, chopped Adds sweetness and flavor

  • 1 cup cauliflower florets Adds texture
  • 1 cup zucchini, diced Adds freshness

  • 3 cups vegetable broth Liquid for the soup
  • 1 cup kale, chopped Optional, can be adjusted to taste
  • 0.25 cup evaporated milk Adds creaminess
  • 1 leaf bay leaf For added flavor
  • 0.5 cup corn kernels Adds sweetness
  • 1 teaspoon smoked paprika For a hint of spice
  • 1 teaspoon chopped fresh dill Enhances aroma and flavor
  • Salt and ground black pepper to taste Season to preference
  • 0.5 cup shredded Cheddar cheese For topping, adjust to taste
  • 0.5 cup chopped fresh parsley For garnish, adjust to taste

Instructions
 

Preparation

  • Melt the butter in a big stock pot over medium-low heat.
  • Add the chopped onions, diced carrots, diced celery, and minced garlic. Cook until the onions are translucent, about 5 to 10 minutes.
  • Introduce the cauliflower florets and diced zucchini to the pot. Cook for 1 to 2 minutes.
  • Stir in the cubed potatoes and vegetable broth. Bring to a boil, then reduce heat and let it simmer until potatoes are tender, about 15 to 20 minutes.
  • Add the chopped kale and let it wilt for 2 to 3 minutes.

Blending

  • Pour about two-thirds of the soup into a blender, secure the lid tightly, and pulse a few times before blending for 1 to 2 minutes until smooth.
  • Return the pureed soup to the stock pot.

Finishing touches

  • Stir in the corn, smoked paprika, dill, salt, and pepper. Cook until corn is warmed through, about 2 to 3 minutes.
  • Ladle the soup into bowls and top with shredded Cheddar cheese and chopped parsley.

Notes
