Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.
In a mixing bowl, sift together flour, baking powder, baking soda, and salt.
In another bowl, whisk together eggs, sugar, and vegetable oil until combined. Add buttermilk and mix well.
Alternately add the dry mixture and buttermilk mixture to the wet ingredients, mixing gently until smooth.
Fill each cupcake liner about two-thirds full with batter.
Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean. Let them cool completely.
Prepare the buttercream by mixing softened butter, confectioners’ sugar, and milk until fluffy.
Frost the cooled cupcakes with a thin layer of buttercream.
Roll out white fondant to 1/4 inch thick and cut out 12 circles for eyeballs to place on top of each cupcake.
Add a dollop of green gel icing in the center of each fondant circle for the iris.
Shape small black fondant pieces into spheres for pupils and place them on top of the green icing.
Use the red edible marker to draw lines on the fondant for a spooky effect.
