Halloween Eyeballs Easy Halloween Cupcakes
Delicious cupcakes decorated to look like spooky eyeballs, perfect for Halloween gatherings!

Ingredients
- 1¼ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- pinch salt
- 2 large eggs at room temperature
- ¾ cup sugar
- ½ cup vegetable oil
- ½ cup buttermilk
- ¼ cup unsalted butter softened
- 1 cup confectioners’ sugar
- 1 tablespoon milk
- 5-6 oz white fondant
- as needed green gel icing
- 1-2 oz black fondant
- 1 red edible marker
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.
- In a mixing bowl, sift together flour, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, sugar, and vegetable oil until combined. Add buttermilk and mix well.
- Alternately add the dry mixture and buttermilk mixture to the wet ingredients, mixing gently until smooth.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean. Let them cool completely.
- Prepare the buttercream by mixing softened butter, confectioners’ sugar, and milk until fluffy.
- Frost the cooled cupcakes with a thin layer of buttercream.
- Roll out white fondant to 1/4 inch thick and cut out 12 circles for eyeballs to place on top of each cupcake.
- Add a dollop of green gel icing in the center of each fondant circle for the iris.
- Shape small black fondant pieces into spheres for pupils and place them on top of the green icing.
- Use the red edible marker to draw lines on the fondant for a spooky effect.
