  • 2 lbs lean beef stew meat, cut into 1½-inch cubes
  • 2 tbsp olive oil For browning the beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 medium potatoes, peeled and cubed
  • 1 cup Guinness stout (or another dark beer) Brings depth of flavor
  • 3 cups low-sodium beef broth Ensures a savory base
  • 2 tbsp tomato paste Adds to the richness
  • 1 tsp dried thyme For seasoning
  • 2 leaves bay leaves Adds aroma and flavor
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium-high heat.
  • Add beef cubes in batches and brown on all sides, about 5-7 minutes. Remove and set aside.
  • In the same pot, sauté chopped onion and minced garlic until translucent, about 3-4 minutes.
  • Deglaze the pot with Guinness stout, scraping the bottom to lift browned bits.
  • Return beef to the pot and add carrots, potatoes, beef broth, tomato paste, thyme, and bay leaves.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 2 to 2½ hours until beef is tender.
  • Remove bay leaves and season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes

For best flavor, allow the stew to simmer low and slow. This dish can be made a day in advance for enhanced flavors. Serve with creamy mashed potatoes or crusty bread.
