Guilt-Free Chicken Parmesan

Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 piece egg beaten
  • 1 cup marinara sauce preferably homemade or no-sugar-added
  • 1 cup shredded mozzarella cheese
  • to taste leaves Fresh basil leaves for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare a baking sheet by lining it with parchment paper or greasing it lightly.
  • In a shallow bowl, mix together the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
  • In another bowl, beat the egg until smooth.
  • Take each chicken breast and dip it into the egg wash, allowing any excess to drip off.
  • Coat the chicken in the breadcrumb mixture, pressing firmly to ensure it adheres well.

Cooking

  • Place the breaded chicken on the baking sheet and bake for 20 minutes.
  • After 20 minutes, remove the chicken from the oven and spoon marinara sauce evenly over each breast, then sprinkle with shredded mozzarella cheese.
  • Return the chicken to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (75°C).
  • Let the chicken rest for a few minutes before garnishing with fresh basil leaves and serving.

Notes

Serve with whole grain pasta, zucchini noodles, or a garden salad. For American-style, consider a side of garlic bread made from whole grain bread. Customize with extra marinara sauce or additional Parmesan.
