Ingredients
  

Main Ingredients

  • 1 lb ground turkey Opt for 90% lean or higher.
  • 4 medium-sized potatoes, peeled and diced Russet or Yukon gold variety recommended.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium bell pepper, chopped (optional)
  • 2 tablespoons olive oil For frying.
  • 1/2 cup chicken broth or water Use broth for more flavor.
  • 1 tablespoon fresh parsley, chopped (for garnish) Optional garnish.

Seasoning

  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.

Instructions
 

Preparation

  • Heat the olive oil in a large skillet or sauté pan over medium heat.
  • Add the chopped onion and minced garlic, cooking for about 3-4 minutes or until the onion is soft and translucent.
  • Add the ground turkey, breaking it into smaller pieces as it browns for about 5-7 minutes.

Cooking

  • Once the turkey is cooked, stir in the diced potatoes and optional bell pepper.
  • Add the thyme, paprika, cumin, salt, and black pepper, mixing thoroughly.
  • Pour in the chicken broth or water and stir again; cover the pan and reduce the heat to low.
  • Allow to simmer for approximately 15-20 minutes, stirring occasionally until the potatoes are tender.
  • Taste and adjust seasoning if necessary, then garnish with parsley before serving.

Notes

Store any leftovers in an airtight container in the fridge for up to three days. For longer storage, freeze portions for up to three months. Reheat thoroughly before serving.
