  • 1 lb ground turkey Opt for lean ground turkey.
  • 1 medium onion, diced Use fresh for best flavor.
  • 2 cloves garlic, minced Increase to 4 cloves for a stronger garlic flavor.
  • 1 can black beans, rinsed and drained Can substitute with kidney or pinto beans.
  • 1 can corn, drained
  • 1 can diced tomatoes Include juice for added flavor.
  • 2 cups chicken or vegetable broth Use homemade for better taste.
  • 1 packet taco seasoning
  • to taste Salt and pepper Adjust according to preference.

Optional Toppings

  • Shredded cheese Add for richness.
  • Sour cream Provides creaminess.
  • Avocado Adds healthy fats.
  • Cilantro Fresh herbs enhance flavor.

Instructions
 

Preparation

  • Heat a large pot over medium heat and add the ground turkey. Cook until browned, about 5-7 minutes.
  • Add the diced onion and minced garlic and sauté for another 3-4 minutes until the onion is translucent.
  • Stir in the black beans, corn, and diced tomatoes with their juice.
  • Sprinkle the taco seasoning over the mixture and pour in the broth. Stir well to combine.

Cooking

  • Bring the mixture to a simmer, which will take about 5-10 minutes.
  • Reduce heat and let it cook on low for 20-30 minutes to meld the flavors.
  • Taste and add salt and pepper as needed before serving.

Serving

  • Ladle the soup into bowls and offer optional toppings for guests to personalize their servings.
