  • 1 pound ground turkey Lean ground turkey for a healthier option.
  • 2 large sweet potatoes, peeled and diced Firm sweet potatoes for best texture.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced Use any color bell pepper.
  • 1 cup frozen peas Fresh peas can be used if available.
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil Use for roasting and sautéing.
  • 1/2 cup shredded cheese (optional) Cheddar or mozzarella.
  • Fresh parsley, for garnish (optional) Enhances presentation.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the diced sweet potatoes, olive oil, paprika, cumin, oregano, salt, and pepper. Toss until evenly coated.
  • Spread the sweet potatoes in a single layer on a baking sheet.

Cooking

  • Roast the sweet potatoes in the oven for about 25 minutes, stirring halfway through, until tender and slightly caramelized.
  • While the sweet potatoes roast, heat a skillet over medium heat. Add a little olive oil if needed, then add the diced onion and bell pepper. Sauté for 3-4 minutes until soft.
  • Add the minced garlic and ground turkey to the skillet. Cook until browned and fully cooked, about 7-8 minutes.
  • Mix in the frozen peas and cook for an additional 2 minutes, then remove from heat.
  • Once sweet potatoes are done roasting, mix them with the turkey mixture. If using cheese, sprinkle it over the top and return the dish to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
  • Serve warm, garnished with fresh parsley if desired.
