  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 green onions sliced
  • Olive oil
  • Fresh cilantro, chopped (optional for garnish)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly. Use a fork to poke holes in each potato.
  • Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until soft.

Cooking

  • Heat a large skillet over medium heat. Add a drizzle of olive oil and sauté the chopped onion for about 3-4 minutes.
  • Add garlic and bell pepper, cooking for another 2-3 minutes.
  • Add ground turkey to the skillet, breaking it apart. Cook until browned, about 5-7 minutes.
  • Stir in chili powder, cumin, paprika, salt, and pepper.
  • Add corn and black beans, mixing well, and cook for 2-3 minutes until heated through.

Assembly

  • Remove the sweet potatoes from the oven and cool slightly. Cut each potato in half and fluff the insides.
  • Spoon the ground turkey mixture into each sweet potato half and top with shredded cheese.
  • Return to the oven and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  • Garnish with sliced green onions and cilantro before serving.

Notes

For best results, choose similar-sized sweet potatoes for even cooking. You can prepare turkey filling ahead of time and store in the fridge. Consider adding herbs for extra flavor.
