Ingredients
  

Main Ingredients

  • 1 lb ground chicken Lean protein base
  • 1 tbsp olive oil For sautéing vegetables
  • 1 yellow onion, diced Adds sweetness and flavor
  • 2 bell peppers, diced Any color will work
  • 4 cloves garlic, finely minced Enhances flavor
  • 1 can black beans, drained and rinsed Adds protein and fiber
  • 1 can kidney beans, drained and rinsed Adds protein and fiber
  • 28 oz diced tomatoes Base for the chili sauce
  • 2 tbsp tomato paste Intensifies tomato flavor
  • 1/2 tsp salt Adjust to taste
  • 1/4 tsp black pepper Adjust to taste
  • 2 tbsp chili powder For spice and flavor
  • 1 tbsp cumin Adds warmth
  • 1 tbsp paprika Adds color and flavor
  • 1 cup chicken broth For moisture
  • 2 small jalapeño peppers, optional, diced Add for spice

Optional Toppings

  • sour cream or Greek yogurt For creaminess
  • shredded cheddar cheese Popular topping
  • jalapeños For extra spice
  • tortilla chips For crunch

Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.
  • Add the diced yellow onion, bell peppers, and minced garlic. Sauté for 2-3 minutes until the onions are translucent.

Cooking

  • Add the ground chicken, breaking it up with a spatula or wooden spoon. Cook for about 8-10 minutes until browned.
  • Stir in the tomato paste and cook for 30-60 seconds.
  • Pour in the diced tomatoes with their juices, chicken broth, black beans, kidney beans, and seasonings (salt, black pepper, chili powder, cumin, and paprika). Stir to combine.
  • Cover the pot and let simmer on medium heat for 15-20 minutes, stirring occasionally.

Serving

  • Taste the chili and adjust seasonings as needed.
  • Serve hot with a variety of toppings for customization.

Notes

This chili freezes well for about three months. Consider adding different beans or vegetables for variation.
