Main Ingredients

  • 1 pound ground beef Use fresh, high-quality beef for best flavor.
  • 1 medium onion, chopped Provides flavor and aroma.
  • 2 cloves garlic, minced Enhances the soup's flavor.
  • 3 medium carrots, sliced Adds sweetness and texture.
  • 2 medium potatoes, diced Makes the soup hearty.
  • 1 cup celery, chopped Adds crunch and flavor.
  • 1 can (14.5 ounces) diced tomatoes Adds acidity and flavor.
  • 4 cups beef broth Use low-sodium for better control over saltiness.
  • 1 teaspoon dried basil Provides aromatic flavor.
  • 1 teaspoon dried oregano Enhances the taste of the soup.
  • 1 teaspoon salt Adjust according to taste.
  • 1/2 teaspoon black pepper For seasoning.
  • 1/2 teaspoon paprika Adds a hint of smoky flavor.
  • 1 cup green beans, chopped For color and additional nutrients.
  • 1 cup corn kernels Adds sweetness and texture.
  • 2 tablespoons olive oil For sautéing.

Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.
  • Add 1 pound of ground beef, breaking it up with a spoon, and cook until browned and no longer pink.
  • Remove excess fat as needed.
  • Stir in a chopped medium onion and 2 minced cloves of garlic. Cook for 3 to 4 minutes until softened.
  • Add 3 sliced medium carrots, 2 diced medium potatoes, and 1 cup of chopped celery. Stir well.

Cooking

  • Pour in 4 cups of beef broth and bring to a rolling boil over high heat.
  • Reduce heat to low, cover, and let simmer for 20 to 25 minutes until vegetables are tender.
  • Stir in 1 can of diced tomatoes, 1 teaspoon of dried basil, 1 teaspoon of dried oregano, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of paprika.
  • Add 1 cup of chopped green beans and 1 cup of corn kernels. Stir well.
  • Keep the pot uncovered and simmer for another 10 to 15 minutes.
  • Taste and adjust seasoning if necessary.

Notes

For a thicker soup, you can mash some of the potatoes. Consider adding leafy greens like spinach or kale. Adjust seasonings to taste and avoid overcooking vegetables if using frozen.
