Ground Beef Quesadillas

A flavorful and satisfying dish that combines seasoned ground beef with melty cheese and crispy tortillas. Perfect for family dinners or casual gatherings.

Ingredients
  

For the Filling

  • 1 pound ground beef Use lean ground beef to avoid excessive grease.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 each bell pepper, diced (any color)
  • 1 cup frozen corn
  • 1 tablespoon chili powder Adjust according to taste.
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For Assembly

  • 4 large flour tortillas Whole wheat or corn tortillas can be used as alternatives.
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix) Feel free to experiment with different cheeses.
  • 2 tablespoons cooking oil For frying the tortillas.

Optional Toppings

  • sour cream For serving.
  • guacamole For serving.
  • salsa For serving.
  • jalapeños For serving.

Instructions
 

Preparation

  • Heat a large skillet over medium heat and add one tablespoon of cooking oil.
  • Add the diced onion and bell pepper, and cook for about 3-4 minutes until they become tender.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  • Drain any excess fat and sprinkle in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well and add the frozen corn. Cook for another 2 minutes.
  • Remove the beef mixture from the skillet and set aside.

Cooking

  • Wipe out the skillet and return it to medium heat. Add another tablespoon of cooking oil.
  • Place one tortilla in the skillet and sprinkle half of the shredded cheese evenly on one half of the tortilla.
  • Spoon some of the beef mixture on top of the cheese, then sprinkle a bit more cheese on top of the filling.
  • Fold the tortilla over to create a half-moon shape. Cook for about 2-3 minutes until the bottom is golden brown.
  • Carefully flip the quesadilla using a spatula and cook the other side for another 2-3 minutes until golden and crispy.
  • Transfer the quesadilla to a cutting board and let it rest for a minute before slicing.
  • Repeat the process for the remaining tortillas and filling.

Notes

Slice each quesadilla into wedges for easy sharing. Garnish with fresh cilantro and lime wedges. Allow guests to customize with bowls of sour cream, guacamole, and salsa.
