  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 2 large potatoes, diced Yukon Gold or red potatoes are recommended.
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped Any color of bell pepper can be used.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil Can substitute with avocado or canola oil.
  • Optional toppings: green onions, cheese, hot sauce Customize your toppings based on preference.

Preparation

  • Heat the olive oil in a large skillet over medium heat until shimmering.
  • Add the chopped onion, bell pepper, and minced garlic. Sauté until soft and translucent, about 5 minutes.
  • Add the ground beef and break it up with a spatula. Continue to cook until browned, approximately 6 to 8 minutes, stirring occasionally.
  • Mix in the diced potatoes, coating them well with the beef and vegetables. Season with salt and pepper.
  • Continue cooking over medium heat, stirring occasionally, until the potatoes are tender, about 10 to 15 minutes.
  • If the mixture starts to stick, add a little water or broth to deglaze the skillet.
  • Taste and adjust the seasonings as necessary before serving.
  • Serve hot, topped with optional ingredients like green onions, cheese, or hot sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in a skillet or microwave, adding a splash of water or broth if needed.
