Main Ingredients

  • 1 pound ground beef Use high-quality ground beef for richer flavor.
  • 1 tablespoon olive oil For sautéing.
  • 1 medium onion, chopped Provides the base flavor.
  • 3 cloves garlic, minced Enhances flavor.
  • 1 medium carrot, diced
  • 2 stalks celery, diced
  • 1 medium bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes Adds acidity and sweetness.
  • 6 cups beef stock or broth For the soup base.
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
  • 2 cups pasta (such as elbow macaroni or shells) Use preferred pasta type.
  • 1 cup fresh spinach Add at end for freshness.
  • to taste Grated Parmesan cheese (optional) For topping.
  • to taste Fresh parsley, chopped For garnish.

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent for 3 to 5 minutes.
  • Stir in minced garlic and sauté for another minute until fragrant.
  • Add ground beef, breaking it apart with a wooden spoon, and cook until browned (about 5 to 7 minutes). Drain excess fat if necessary.
  • Add diced carrots, celery, and bell pepper, and sauté for 5 to 7 minutes until softened.

Cooking

  • Pour in diced tomatoes with their juices and the beef stock. Stir in the Italian seasoning, salt, and pepper.
  • Bring to a boil, then reduce heat and let simmer for about 15 minutes.
  • Add pasta and cook according to package instructions (around 8 to 10 minutes) until al dente.
  • Stir in fresh spinach and cook for another minute until wilted.

Serving

  • Serve hot, topped with grated Parmesan cheese and chopped parsley.

Notes

For different flavors, try using Italian sausage or ground turkey instead of ground beef. Add more vegetables like zucchini or mushrooms for variety.
