Ingredients
  

Main Ingredients

  • 1 lb ground beef Choose lean ground beef for a healthier option.
  • 1 cup cooked rice Use white or brown rice.
  • 1 can black beans Rinsed and drained.
  • 1 cup corn Can be frozen or canned.
  • 1 cup diced tomatoes
  • 1/2 cup diced onion Fresh onion for flavor.
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro Chopped for garnish.
  • 1 unit avocado Sliced for topping.
  • 1 tablespoon olive oil For cooking the onion.
  • 1 tablespoon taco seasoning
  • to taste salt and pepper For seasoning.

Instructions
 

Preparation

  • Dice your onion and tomatoes, chop the cilantro, and slice the avocado.

Cooking

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until soft and translucent.
  • Add the ground beef to the skillet, breaking it apart with a spatula, and brown it for about 6-8 minutes. Drain any excess fat if necessary.
  • Sprinkle in 1 tablespoon of taco seasoning and mix well. Add the rinsed black beans, corn, and diced tomatoes. Stir everything together and cook for an additional 5 minutes.

Assembly

  • In serving bowls, layer with cooked rice at the bottom, followed by the beef mixture. Top with shredded cheddar cheese, avocado slices, and cilantro.
  • Season with salt and pepper to taste, and add any additional toppings as desired.

Notes
