Ingredients
  

  • 4 pieces ripe peaches cut in half and pitted
  • 1 scoop ice cream any flavor of your choice per serving
  • 1/4 cup toasted pistachios for topping
  • 2 tablespoons honey or any sweet drizzle for topping
  • pinch salt to enhance flavors
  • pinch pepper for a dash of unexpected zest
  • 1 tablespoon olive oil for grilling
  • fresh basil or mint for garnish

Instructions
 

  • Cut each peach in half and remove the pits. Season the cut sides with a pinch of salt and pepper.
  • Drizzle olive oil on the cut sides of the peaches to prevent sticking.
  • Preheat your grill or grill pan. Once hot, place the peaches cut side down on the grill.
  • Grill for about 4-5 minutes until charred and slightly soft.
  • Remove the peaches from the grill and serve each half with a scoop of ice cream on top.
  • Drizzle with honey and sprinkle with toasted pistachios. Garnish with fresh basil or mint.

Notes

Store any leftover grilled peaches in an airtight container in the refrigerator for up to 2 days, but it’s best to serve fresh.
