Ingredients
  

For the Sandwich

  • 8 slices slices of bread (whole wheat or white)
  • 2 tablespoons mayonnaise for spreading
  • 1 tablespoon mustard for spreading
  • 1 pound cooked chicken or turkey (sliced) can use leftovers
  • 4 slices cheese (your choice)
  • 8 slices tomatoes
  • 1 cup fresh lettuce or spinach
  • to taste Salt and pepper
  • 2 tablespoons butter (softened) for grilling

Instructions
 

Preparation

  • Start by heating a skillet or grill pan over medium heat.
  • Spread mayonnaise on one side of each slice of bread. On the other side, spread mustard evenly.
  • Lay out four slices of bread, mayo side down. Start layering by adding slices of chicken or turkey evenly.
  • Place a slice of cheese on top of the meat, followed by a layer of tomato slices and a handful of lettuce.
  • Top off each sandwich with another slice of bread, mayo side up. Gently press down.
  • Lightly butter the outside of each sandwich.

Cooking

  • Once the skillet is hot, place the sandwiches, buttered side down, onto the skillet.
  • Cook for about 4-5 minutes per side until golden brown and the cheese has melted. Flip carefully to avoid spilling the fillings.
  • Remove from the skillet and cut each sandwich into halves or quarters for easier handling.
  • Serve immediately while still warm and enjoy!
