  • 2 large boneless, skinless chicken breasts Use high-quality chicken for the best taste.
  • 4 ounces mozzarella cheese, sliced Fresh mozzarella is recommended for better melting.
  • 2 rolls ciabatta rolls Look for rustic ciabatta for best results.
  • 2 tablespoons olive oil Use for marinading chicken.
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Pepper, to taste
  • Fresh basil leaves (optional) For additional flavor.
  • Sliced tomatoes (optional) Add for freshness.
  • Spinach or arugula (optional) For added greens.

Instructions
 

Preparation

  • Preheat your grill or grill pan over medium heat.
  • Prepare the chicken breasts by drizzling them with olive oil and seasoning both sides with garlic powder, salt, and pepper.

Cooking

  • Place the chicken breasts on the grill and cook for about 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C).
  • In the last couple of minutes of grilling, add the sliced mozzarella on top of the chicken and close the grill lid to help the cheese melt.
  • While the chicken finishes cooking, slice the ciabatta rolls in half and lightly toast them on the grill for a minute or two, cut side down.
  • Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing it into strips or leaving it whole.

Assembly

  • Assemble the sandwich by layering the grilled chicken on the bottom half of the ciabatta roll. Add mozzarella, basil leaves, sliced tomatoes, and spinach or arugula if desired.
  • Place the top half of the ciabatta roll on the sandwich, press gently, and serve while warm.

Notes

For added flavor, consider drizzling with balsamic glaze or pesto before serving. Wrap sandwiches in foil for easy transport.
