Ingredients
  

Main Ingredients

  • 2 pounds boneless, skinless chicken thighs Use fresh, high-quality thighs for the best results.
  • 1 batch Chicken Thigh Marinade or choice of marinade A blend of olive oil, garlic, herbs, vinegar, and spices can be used.

Optional Ingredients

  • to taste Chopped fresh herbs (parsley, cilantro, or thyme) For garnish and added flavor.
  • 1 squeeze lemon or lime juice Optional, for freshness.
  • as needed Oil for grilling (olive oil or canola oil) To prevent sticking on the grill.

Instructions
 

Preparation

  • Combine all marinade ingredients in a large ziptop bag.
  • Add the chicken thighs, seal the bag tightly, and massage to coat the chicken evenly.
  • Marinate for at least 30 minutes, preferably up to 12 hours in the refrigerator.

Grilling

  • Preheat your grill to medium-high heat (375 to 400°F).
  • Take the chicken out of the refrigerator and let it sit at room temperature for about 10 minutes.
  • Clean and oil the grill grates.
  • Shake off excess marinade and place the chicken thighs on the grill, smooth side down.
  • Cook undisturbed for 4 to 5 minutes for good sear marks.
  • Flip the chicken and grill for an additional 4 to 6 minutes until the internal temperature reaches 165°F.
  • Remove chicken from the grill, cover with aluminum foil, and let rest for at least 5 minutes.
  • Just before serving, sprinkle with fresh chopped herbs and a squeeze of lemon or lime juice.

Notes

Store leftover grilled chicken in an airtight container in the refrigerator for up to 3-4 days or freeze for 2-3 months. Always let chicken cool before storing.
