  • 4 pieces boneless, skinless chicken breasts Thicker chicken breasts may require longer cooking time.
  • 2 cups fresh tomatoes, diced Use ripe, flavorful tomatoes for best results.
  • 1 cup fresh mozzarella cheese, sliced Can substitute with another cheese like provolone.
  • 1/2 cup fresh basil leaves Add more for extra flavor.
  • 2 tablespoons olive oil Use high-quality extra virgin olive oil.
  • to taste Salt and pepper Adjust based on personal preference.
  • to taste Balsamic glaze (optional, for drizzling) Enhances flavor and presentation.

Instructions
 

Preparation

  • Preheat your grill to medium-high heat.
  • Brush chicken breasts with olive oil and season generously with salt and pepper.

Grilling

  • Place the chicken breasts on the grill; cook for 6-7 minutes on one side.
  • Flip the chicken and grill for another 6-7 minutes or until the internal temperature reaches 165°F (75°C).
  • In the last few minutes of cooking, top each breast with diced tomatoes and slices of mozzarella cheese.
  • Close the grill lid to melt the cheese.

Serving

  • Remove chicken from grill and top with fresh basil leaves.
  • Drizzle with balsamic glaze if desired and serve immediately.

Notes

For added flavor, marinate chicken in olive oil, salt, and pepper for a few hours. Let cooked chicken rest for a few minutes before slicing.
