  • 1 lb ground meat
  • 2 tablespoons oil
  • 1 tablespoon butter
  • 1 large white onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons blue cornmeal
  • 2-3 cups chopped roasted green chile Use fresh roasted or store-bought.
  • 5 cups chicken stock
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 4 small potatoes, diced
  • 1/2 large tomato, chopped

Instructions
 

Cooking

  • Heat oil and butter in a large pot over medium heat.
  • Add ground meat and cook until browned, about 5-7 minutes, stirring occasionally.
  • Add chopped onions and minced garlic, and cook for an additional 2-3 minutes until onions are translucent.
  • Sprinkle in the blue cornmeal and stir to combine, cooking for an additional minute.
  • Incorporate chopped roasted green chiles, garlic powder, salt, and pepper into the pot. Stir together.
  • Pour in chicken stock and bring the mixture to a boil.
  • Once boiling, reduce heat to low and add diced potatoes and chopped tomatoes. Cover and let simmer for 25-30 minutes, stirring occasionally, until potatoes are tender.

Notes

Consider topping with fresh cilantro or lime juice when serving. Great with warm bread or cornbread. Can be customized with different vegetables or proteins.
