  • 2 cups cooked chicken, shredded
  • 1 cup long-grain rice
  • 1 can (10 oz) diced green chiles
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1 cup shredded cheese (cheddar or Monterey Jack)

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, long-grain rice, diced green chiles, drained black beans, cream of chicken soup, and chicken broth.
  • Add the garlic powder, onion powder, salt, and pepper to the mixture. Stir everything well until thoroughly combined.
  • Grease a 9×13 inch baking dish with non-stick spray or a little olive oil. Pour the mixture into the dish, spreading it out evenly.
  • Sprinkle the shredded cheese on top of the casserole.
  • Cover the baking dish with aluminum foil and place it in the oven. Bake for 30 minutes.
  • After 30 minutes, carefully remove the foil and continue baking for an additional 15 to 20 minutes.
  • Once done, let the casserole cool for a few minutes before serving.

Notes

Garnish with fresh herbs or serve with tortilla chips for added texture. You can also adjust spice levels by using mild diced green chiles or adjusting the salt and pepper.
