  • 1/4 cup melted butter Adds richness.

Preparation

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until well mixed.
  • In another bowl, beat together Greek yogurt, milk, eggs, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and mix gently until just combined; a few lumps are fine.
  • Fold in the melted butter.

Waffle Cooking

  • Lightly spray the waffle iron with cooking spray or brush with oil.
  • Pour 1/2 to 3/4 cup of batter onto the hot waffle iron.
  • Cook for 4-5 minutes or until the waffles are golden brown and crisp.
  • Repeat with the remaining batter, keeping waffles warm in a low oven if necessary.

Notes
