  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Ensure it is at room temperature
  • 1 cup Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: sprinkles or coarse sugar for topping

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
  • Add the Greek yogurt, egg, and vanilla extract to the mixture and mix until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Sprinkle with coarse sugar or sprinkles if desired.

Baking

  • Bake the cookies for 10-12 minutes until the edges are golden brown and the centers look slightly underbaked.
  • Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, use room temperature butter and avoid overmixing the dough. Refrigerating the dough for 30 minutes may help if it is sticky. Consider adding lemon zest or almond extract for extra flavor.
