Pancake Batter Ingredients

  • 1 cup all-purpose flour
  • 1 cup Greek yogurt
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup milk or non-dairy alternative Adjust as needed for batter consistency.
  • Cooking spray or butter for the skillet

Preparation

  • In a large mixing bowl, combine the Greek yogurt, eggs, honey or maple syrup, and vanilla extract. Mix until smooth.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently stir in the milk to achieve your desired batter consistency. If the batter is too thick, add a bit more milk.

Cooking

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancakes and cook for another 2-3 minutes until golden brown.
  • Remove from the skillet and keep warm while you continue with the remaining batter.

Notes

For best results, do not overmix the batter. For lighter pancakes, consider beating the egg whites separately and folding them in. Use medium heat for even cooking.
