Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons honey or maple syrup Use maple syrup for a vegan option.
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or oil For greasing the skillet.

Preparation

  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  • In another bowl, mix the Greek yogurt, milk, eggs, honey (or maple syrup), and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. If the batter is too thick, add a little more milk until you reach your desired consistency.

Cooking

  • Heat a non-stick skillet or griddle over medium heat and add a bit of melted butter or oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 3–4 minutes until bubbles form on the surface and the edges look set.
  • Flip the pancakes and cook for an additional 2–3 minutes on the other side until golden brown.
  • Transfer the pancakes to a warm plate and repeat with the remaining batter.

Notes

For serving, stack the pancakes high and drizzle with pure maple syrup or top with fresh fruit, whipped cream, or nuts. Feel free to experiment with other flavors by adding chocolate chips or spices to the batter.
