Ingredients
  

For the marinade

  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the chicken

  • 4 pieces boneless skinless chicken breasts

Instructions
 

Preparation

  • In a bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, paprika, salt, and black pepper. Mix well until smooth.
  • Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Seal the bag or cover the dish with plastic wrap.
  • Marinate the chicken in the refrigerator for at least 1 hour, ideally for 4 hours or overnight.

Cooking

  • Preheat your grill or oven. If grilling, heat the grill to medium-high. For baking, preheat your oven to 400°F (200°C).
  • Remove the chicken from the marinade and let any excess drip off. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). If baking, place the chicken on a baking sheet and cook for about 20-25 minutes.
  • Once cooked, let the chicken rest for a few minutes before slicing.

Notes

Serve sliced chicken on rice or quinoa, with salad or roasted vegetables. Consider drizzling with tahini or garlic sauce for added flavor. Store leftover chicken in an airtight container and consume within 3-4 days.
