  • 2 cups cooked chicken, shredded Use leftover chicken for convenience.
  • 1 cup plain Greek yogurt Provides creamy texture and protein.
  • 1 tablespoon Dijon mustard Adds tangy flavor.
  • 1 tablespoon lemon juice Freshly squeezed if possible.
  • 1 stalk celery, diced For crunch.
  • 1/4 cup red onion, finely chopped For flavor.
  • 1/4 cup cucumber, diced Adds freshness.
  • 1/4 cup fresh parsley, chopped For garnish and flavor.
  • to taste Salt and pepper Adjust according to preference.
  • 1/4 cup almonds or walnuts, chopped Optional for added crunch.

Preparation

  • In a large mixing bowl, combine the plain Greek yogurt, Dijon mustard, and lemon juice. Stir until smooth.
  • Add the shredded chicken to the bowl and mix well to coat the chicken with the yogurt mixture.
  • Incorporate the diced celery, chopped red onion, diced cucumber, and chopped parsley. Gently fold the ingredients together until evenly combined.
  • Season with salt and pepper to taste. If adding nuts, fold them in gently to avoid crushing.
  • Taste the salad and adjust any seasoning as needed. Enjoy immediately or refrigerate for an hour to let the flavors meld together.

Notes

Keep the salad in an airtight container in the fridge for 3 to 4 days. You can experiment with different add-ins and flavors as desired.
