Bagel Base Ingredients

  • 2 cups all-purpose flour
  • 1 cup plain Greek yogurt Using room-temperature yogurt is recommended.
  • 1/4 cup unsweetened applesauce Adds moisture.
  • 2 tablespoons honey Adjust sweetness to taste.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries Do not thaw if using frozen.

Crunchy Topping Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup chopped nuts (e.g., almonds or walnuts) Omit for nut-free option.
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 egg for egg wash

Preparation

  • Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, combine the flour, baking powder, and salt. Mix well to blend the dry ingredients.
  • In a separate bowl, mix the Greek yogurt, applesauce, and honey until smooth.
  • Gradually fold the wet mixture into the dry ingredients until it forms a dough. Avoid overmixing.
  • Gently fold in the fresh blueberries, being careful not to break them apart.
  • Divide the dough into eight equal portions. Roll each portion into a rope about 10 inches long, then shape it into a circle and pinch the ends together to form a bagel.
  • Place the formed bagels on the prepared baking sheet.
  • In a small bowl, mix the oats, chopped nuts, brown sugar, and cinnamon to create the crunchy topping. Sprinkle this mixture evenly over the bagels.
  • Beat the egg and brush the mixture over the tops of the bagels to give them a golden finish.

Baking

  • Bake for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
  • Allow the bagels to cool on a wire rack before serving.
