Ingredients
  

For the Meatballs

  • 1 lb Ground beef or lamb Choose your preferred meat.
  • 1/2 cup Breadcrumbs Use fresh or dried.
  • 1/4 cup Fresh parsley, chopped Use fresh for best flavor.
  • 1/4 cup Fresh mint, chopped Use fresh for best flavor.
  • 2 cloves Garlic, minced
  • 1/2 cup Onion, finely chopped
  • 1 large Egg Helps bind the mixture.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.

For the Lemon Sauce

  • 2 tbsp Olive oil For cooking the sauce.
  • 1 cup Chicken or vegetable broth
  • 1/4 cup Fresh lemon juice Freshly squeezed for best flavor.
  • 1 tbsp Zest of one lemon Adds extra lemon flavor.
  • 1 tbsp Cornstarch (optional) For thickening the sauce.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease it with cooking spray.
  • In a large bowl, combine ground beef or lamb with breadcrumbs, chopped parsley, chopped mint, minced garlic, finely chopped onion, egg, salt, and pepper. Mix until well combined but avoid overmixing.
  • Shape the mixture into meatballs about one to two inches in diameter and place them on the prepared baking sheet.

Cooking

  • Bake the meatballs in the preheated oven for 20 to 25 minutes or until browned and cooked through.
  • While the meatballs bake, heat olive oil in a saucepan over medium heat. Add broth and fresh lemon juice, bringing to a gentle simmer.
  • Stir in lemon zest and season with salt and pepper to taste.
  • If a thicker sauce is preferred, mix cornstarch with water and stir into the saucepan, cooking until slightly thickened.

Serving

  • Serve the warm meatballs drizzled with lemon sauce. Garnish with additional fresh herbs if desired.
