Grandma's Hash Brown Casserole

Main Ingredients

  • 30 ounces frozen hash browns, thawed Thawed for even cooking
  • 1 cup sour cream Can substitute with Greek yogurt for a healthier option
  • 10.5 ounces cream of chicken soup
  • 2 cups shredded cheddar cheese Reserve half for topping
  • 1/2 cup diced onion
  • 1/2 cup melted butter Can use olive oil as a substitute
  • to taste salt and pepper

Optional Ingredients

  • 1 cup diced green bell pepper Adds flavor and texture
  • 1 cup cooked, shredded chicken For added protein

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by greasing it lightly.
  • In a large mixing bowl, combine the thawed hash browns, sour cream, cream of chicken soup, diced onion, melted butter, and half of the cheddar cheese. Mix well until all ingredients are evenly combined. Season with salt and pepper to taste.
  • If using, mix in the diced green bell pepper and shredded chicken at this point.
  • Transfer the mixture into your prepared baking dish, spreading it out evenly.
  • Sprinkle the remaining cheddar cheese over the top of the mixture.

Baking

  • Cover the dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes.
  • After 30 minutes, remove the foil and continue baking for another 20-25 minutes, or until the top is golden and bubbly.

Serving

  • Let the casserole cool for a few minutes before serving to help it set, making it easier to cut into squares.

Notes

For best results, always use thawed hash browns. Optionally, try different cheeses for added flavors. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
