Ingredients
  

For the filling

  • 8 ounces goat cheese, softened
  • 1/4 cup cream cheese, softened
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

For the peppers

  • 12 pieces mini sweet peppers
  • Olive oil for drizzling

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Slice the mini sweet peppers in half lengthwise and remove the seeds and membranes.
  • In a medium bowl, blend the softened goat cheese and cream cheese until smooth.
  • Stir in the chopped chives, parsley, garlic powder, black pepper, and salt until well combined.
  • Using a spoon or piping bag, fill each pepper half with the cheese mixture and pack it lightly.

Cooking

  • Place the stuffed peppers on the prepared baking sheet and drizzle with olive oil.
  • Bake in the preheated oven for about 20 minutes until the peppers are tender and the filling is warm.
  • Remove from the oven and let the stuffed peppers cool slightly before serving.
