  • 2 3/4 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 1/2 cups granulated sugar
  • 1 large egg Can be replaced with applesauce or flaxseed egg if needed.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional) Enhances flavor if used.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the gluten-free all-purpose flour, baking soda, and salt.
  • In a separate large bowl, cream the softened butter with the granulated sugar until light and fluffy.
  • Beat in the egg and both the vanilla and almond extracts until well combined.
  • Gradually incorporate the dry flour mixture into the wet mixture, stirring until a dough forms.
  • Sprinkle some gluten-free flour on a clean surface and roll out the dough to about 1/4 inch thickness.
  • Use cookie cutters to cut out shapes from the dough and transfer to a baking sheet lined with parchment paper.

Baking

  • Bake your cookies in the preheated oven for 8-10 minutes, or until the edges are lightly golden brown.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes
