Cookie Ingredients

  • 2 cups gluten-free all-purpose flour Use a high-quality gluten-free flour blend.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Icing Ingredients

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk Adjust quantity for desired consistency.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the gluten-free all-purpose flour, baking soda, and salt.
  • In another bowl, cream the softened unsalted butter and sugar together until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
  • Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  • Flatten the balls slightly with the palm of your hand.

Baking

  • Bake in the preheated oven for 10-12 minutes until the edges are lightly golden and the centers are soft.
  • Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Icing

  • In a small bowl, combine the powdered sugar and milk, stirring until smooth.
  • Drizzle the icing over cooled cookies for a sweet finishing touch.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them between sheets of parchment paper.
