Ingredients
  

Main Ingredients

  • 1.5 pounds ground beef or turkey Choose a mix of meats for richer flavor.
  • 1 cup gluten-free breadcrumbs or rolled oats Oats are a great gluten-free substitute.
  • 1 cup milk or non-dairy alternative Keep at room temperature before mixing.
  • 1 large egg
  • 1 small onion, finely chopped For added moisture.
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 1/4 cup ketchup (plus more for topping)
  • 1 tablespoon Worcestershire sauce
  • to taste fresh parsley, chopped (optional) For garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground beef or turkey, gluten-free breadcrumbs or rolled oats, milk, egg, onion, garlic, oregano, basil, salt, pepper, ketchup, and Worcestershire sauce.
  • Mix everything together until well combined but do not over-mix as this can make the meatloaf tough.
  • Transfer the mixture into a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
  • Spread a thin layer of ketchup over the top of the meatloaf for added flavor and moisture.

Cooking

  • Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Allow the meatloaf to rest for about 10 minutes before slicing.

Notes

Serve with creamy mashed potatoes or roasted vegetables. Leftovers make great sandwiches with gluten-free bread.
